Nut Curry Supreme

1 large raw onion, chopped
4 cloves garlic, finely chopped
1-1/2 inches fresh peeled ginger root, finely chopped
1 or 2 green chiles, chopped
? cup ghee
3 rounded Tbsp. garbanzo flour
? cup lemon juice
2 tsp. turmeric
1-1/2 tsp. cumin
1-1/2 tsp. coriander
1-1/2 tsp garam masala
4 cups yogurt or buttermilk
1/8 cup peeled almonds
1/8 cup walnuts
? cup cashews, pecans or apricot kernels
1/8 cup watermelon or pumpkin seeds
2 zucchinis, chopped

Mix ? cup yogurt or buttermilk with garbanzo flour and stir until it forms a smooth paste. Then stir into the rest of the yogurt or buttermilk. Saut? onions in ghee until they are clear to golden brown. Add chiles, ginger and garlic, and saut? until ginger and garlic are golden. Add turmeric, and saut? on a low heat until golden brown. Then add other spices. Add yogurt or buttermilk mixture. Then add lemon juice. Continue cooking on low heat. Add zucchinis, nuts and seeds, and continue simmering until zucchini is soft. Serves 4.
